Everybody knows Friday = FUN DAY, which is why we were on the hunt today for the most fun, colorful afternoon snack we could possibly find. It’s the weekend, afterall, and as far as we’re concerned, calories and diets don’t exist for the next 72 hours.

Get ready, Minkettes, to indulge in Funfetti Whoopie Pies – yes, we’re talking buttercream, rainbow sprinkles and a guaranteed sweet-tooth overload – all thanks to the salivation-inducing blog, Confections from the Cody Kitchen. Just follow the steps below to make this fun-filled, Friday afternoon treat.

Best Ever Buttercream Frosting (adapted from allrecipes.com)
Ingredients:
2 C unsalted butter (4 sticks)
8 C confectioners sugar, sifted
1/2 tsp salt
2 tsp vanilla extract
1 C heavy whipping cream*Use clear versus dark vanilla extract for a whiter frosting.
Directions:
In bowl or stand mixer, cream butter until light and fluffy. Add confectioners sugar and blend until smooth.
Add salt, vanilla and 6 oz whipping cream. Continue to blend until well incorporated. Add additional 2 ounces of cream if frosting is too thick.
Soft and Chewy Almond Sugar Cookies (CCK Original)

Ingredients:
1 1/2 C white sugar
2/3 C butter (cold)
2/3 C shortening (room temp)
2 eggs
2 tsp almond extract
2 1/2 C cake flour
1 C all purpose flour
2 tsp cornstarch
2 tsp baking powder
1 tsp salt
sugar in the raw (I like raw sugar for this, but any coarse sugar would work)

Directions:
Preheat oven to 350 degrees and prepare baking sheet.Cream sugar, butter and shortening. Stir in eggs and almond extract. Combine flour, cornstarch, baking powder and salt and add to butter/egg mixture.Stir to combine until dough forms. (Add sprinkles to the dough for the “funfetti effect.”)
Form dough into walnut sized balls (I used a small cookie scoop) and roll in raw sugar. Place on prepared pan.
Bake for 4 minutes. Open oven and quickly press each cookie to desired thickness with back of spoon. Bake for additional 4 minutes (8 minutes total).Remove to cooling rack. Allow to cool completely.

We spotted a recipe for Grilled Chicken with Spinach and Melted Mozzarella on Skinny Taste, and we already know it is going to become our new go-to weeknight recipe. Simple, healthy and delicious – it doesn’t get much better than that! See the recipe below and stop by SkinnyTaste.com for more recipes.

Ingredients:

  • 6 chicken cutlets
  • 1 tsp olive oil
  • salt and pepper
  • 3 cloves crushed garlic
  • 10 oz frozen spinach (drained)
  • 3 oz shredded mozzarella
  • 1 roasted sliced red pepper
  • olive oil spray
Directions:

1. Preheat oven to 400° and lightly spray a grill with oil.

2. Season chicken with salt and pepper and cook it on the grill until it is no longer pink.

3. Heat a sauté pan on medium heat. Add oil and garlic and sauté it for a few seconds. Then add spinach, salt and pepper. Cook a few minutes until heated through.

4. When chicken is done, lay it on a baking sheet lined with foil. Divide the spinach evenly between the 6 pieces and place on top. Add 1/2 oz of mozzarella to each slice, then add slices of roasted pepper.

5. Bake about 6-8 minutes until melted.

Gran Electrica, a new Mexican restaurant in Dumbo, just opened yesterday and we are already hearing incredible things about it. Stop by for some delicious pork tacos (made from scratch, of course) or grab a margarita after work. We cannot wait to stop by when it gets warmer and relax on the back patio. This is definitely gonna be our go-to summer joint.
